This recipe is the perfect mix of spicy black beans, fluffy brown rice, and a creamy avocado-lime sauce that brings all the flavors together. Add some fresh salsa and garnish with cherry tomatoes and green onions for a colorful, satisfying dish that you’ll want to make over and over again.
½cupcilantrolarge stems removed and finely chopped
For the Avocado-Lime Sauce:
1large garlic clove
1large avocadopitted
3tbspfresh lime juice
1tbspwater
¼tspfine sea saltor to taste
Instructions
Step 1: Cook the Brown Rice
In a medium pot, add 1 tbsp of coconut oil and the rice along with 2 cups of water.
Bring the mixture to a simmer over medium-high heat. Once simmering, reduce the heat to low-medium and cover.
Cook the rice for about 15-20 minutes or until the water is absorbed and the rice is tender.
Step 2: Prepare the Spicy Black Beans
In a large skillet or wok, melt 2 tbsp of coconut oil (or olive oil) over medium heat.
Add the diced sweet onion and minced garlic with a pinch of salt. Sauté for about 5-6 minutes until softened and fragrant.
Stir in the chopped tomatoes, chili powder, garlic powder, dried oregano, cayenne, and salt. Continue to sauté for another 3-5 minutes until the tomatoes soften.
Add the tomato paste and black beans. Cook for a few more minutes until everything is heated through.
Finally, stir in the chopped cilantro and remove from heat.
Step 3: Make the Avocado-Lime Sauce
In a food processor, mince the garlic clove. Add the avocado, fresh lime juice, water, and salt, and process until smooth.
Taste the sauce and adjust the lime juice or salt as needed.
Step 4: Assemble the Burrito Bowls
Divide the cooked brown rice between 2-3 bowls.
Top each bowl with a couple of scoops of the spicy black bean mixture, a generous spoonful of salsa, and the creamy avocado-lime sauce.
Garnish with sliced green onions and cherry tomatoes.
Serve over a bed of greens for extra freshness.
