Grilled Scampi and Arugula Pizza
One of my all-time favourite dinners is pizza, and I’ve been savouring this Grilled Scampi and Arugula Pizza recipe for years. It’s a delightful combination of flavours that has earned a permanent spot in my recipe box and has become a household favourite.
Currently, I’m on a 7-day health reset, focusing on nourishing my body with clean, wholesome foods. But I have to admit, I’m already daydreaming about the meals I’ll enjoy once the reset is complete. And at the top of that list is this mouthwatering Grilled Scampi and Arugula Pizza. Just thinking about it makes my taste buds tingle with anticipation!

Grilled Scampi and Arugula Pizza
Ingredients
- 1 Pizza dough homemade of store-bought
- 4 tbsp Olive Oil
- ¼ cup Butter
- 1 large Garlic Clove minced
- 10 oz (283 grams) Large shrimp peeled uncooked, deveined
- 2 tbsp Dry white wine
- 1 tbsp Parsley (fresh) chopped
- 2 Tomatoes seeded chopped (Remove the inside seeds)
- 2 Shallots sliced lengthwise
- 2 tbsp Green onion chopped
- 1 tbsp Chives (fresh) chopped
- ¼ cup Sharp white cheddar grated
- ¼ cup Mozzarella grated
- ¼ cup Parmesan cheese (fresh) grated
- 1/2 cup Arugula (fresh)
Instructions
- Prepare barbecue (medium heat) OR Preheat the oven to 425'F.
- Brush the top of the crust with 1 tablespoon of olive oil. Grill or broil crust, oiled side toward heat, until brown spots appear, rotating frequently, about one minute. Brush bottom of crust with tablespoon olive oil & grill.
- Melt butter in a heavy large skillet over medium-high heat. Add garlic and stir for 30 seconds.
- Add shrimp and sauté for about a minute. Add the wine and parsley and cook until shrimp are almost cooked through, stirring occasionally. Using a slotted spoon, transfer shrimp to a large bowl.
- Boil cooking liquid for 30 seconds. Pour over shrimp.
- Mix tomatoes, shallots, green onion and chives in a medium bowl.
- Stir in remaining 2 tablespoons of oil.
- Season with salt and pepper.
- Spoon vegetable mixture over crust.
- Top with shrimp and any juices.
- Sprinkle cheese over.
- Bake Pizza until the crust is golden and the cheese is bubbly and melted.
- Once the pizza is done, remove it from the grill. Immediately top it with fresh Arugula and a squeeze of lemon juice.
- Serve and Enjoy: Slice the pizza and serve immediately.
